  • Assist the Chef De Partie/Demi Chef De Partie to establish standard Bakery recipes and ensure the compliance with them.
  • Prepare and bake according to standard procedures, recipe cards, photographs and given instructions.
  • Constantly inspect taste, temperature and visual appeal, make sure that all dishes are uniform and that established portion sizes are adhered to.
  • Participate in product development and in controlling the smooth operation of the Bakery kitchen.
  • Ensure food quality, food taste, food presentation and food requisition.
  • Have a good knowledge of Bakery items to carry out the duties and responsibilities for the position in an efficient and productive manner.
  • Ensure proper sanitation procedures are followed and the kitchen is always clean, neat and tidy.
  • Assist the Chefs in the day-to-day operation of the kitchen and to help maintain a high Standard of food preparation.
  • Ensure all equipment is in full working order.
  • Ensure an adequate supply of all products prepared on a timely basis.
  • To do requisition of all items needed for the following day from the food storeroom, non-food storeroom and stewarding department.
  • Sorts, processes and folds Rooms and F&B linens such as sheets, towels, table clothes, and napkins.
  • Sorts used linens into appropriate categories for washing.
  • Sorts out stained or torn linen.
  • Loads and unloads driers.
  • Shakes wet sheets, table linens and napkins prior to ironing in order to spread them out. 
  • Feeds washed linens into ironer.
  • Retrieves folded linens and stacks or hangs clean linens as appropriate.
  • Sorts clean towels, rugs and robes. 
  • Uses towel folder and manual folding for bath towels, washcloths, rugs and robes.
  • Places folded product on appropriate rack.
  • Operates and maintains folding equipment.
  • Reports any problems or deficiencies to manager.
  • Complies with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in Impact.
  • Works harmoniously and professionally with co-workers and supervisors.
  • Assists with responsibilities and duties in the absence or heavy volume in the areas of Valet, Dry Cleaning, and Housekeeping.

  • Manage and supervise the Kitchen team in accordance with Four Seasons core and culture standards and local operating criteria at all times.

  • Comply with HACCP procedures and ensures highest level of hygiene and sanitation is all food preparation. Examine food suppliers and received goods for quality and quantity. Assist the Executive Sous Chef in the development of creative menus and implementation of promotions in keeping with seasonality and restaurant concepts.
  • Must be “hands on” and able to practice and demonstrate excellent technical kitchen skills. Lead in the execution of special culinary events.
  • Requisition all food items needed daily from the food storeroom in concert with all cooks. Supervise all employees during the setup, service and breakdown for each meal period.
  • Verify the taste and presentation of produced food prior to meal periods. Follow all control and key procedures.
  • Communicate and delegate the production schedule for the day, collating quantities to be produced from the forecast and for the next day’s banquet function sheets. Expedite orders on the line. Inspect and supervise the sanitation and maintenance of equipment.
  • Select, train, evaluate, plan schedules and ensure high employee performance, motivate, coach, and discipline all employees in the Restaurant to ensure that established cultural and core standards are met.
  • Manage the Restaurant Dining operation as well as the Private Bar activities and its respective employees inclusive of managers.
  • Be visible in the operation, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control
  • Work closely with the Restaurants and IRD Manager, assigned Sous Chef and pastry to maintain effective menu and amenity options while ensuring excellent product quality at a fair price and attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Minimum 2 years’ experience as a General Maintenance in a luxury, fast-paced environment.
  • Requires attention to detail and problem-solving skills.
  • Diploma or degree in relevant field is a plus.
  • Good command of the English language
